Caribbean spiny lobsters are different from their Maine counterparts—no claws, but all the sweet, tender meat is packed into their tails. These nocturnal creatures spend their days hiding among coral reefs and rocky ledges, the same waters that Captain Levardo’s grandfather Norman worked over a century ago.
